Gingerbread Oat Nog Protein Cupcakes

Gingerbread spice and Oat Nog nice! Nog doubt about it, these protein-packed cupcakes are the ultimate festive treat! Made with our Oat Nog and Good Protein’s Gingerbread Cookie All-in-One Shake, they’re the perfect way to fuel all your holiday cheer!

Ingredients

  • 1 ½ (187.5g) cups all-purpose flour
  • 1 scoop (44g) Good Protein Gingerbread Cookie All-in-One Shake
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 1 cup + 1/4 cup Earth’s Own Oat Nog
  • ⅓ cup coconut oil, melted
  • ½ cup light brown sugar (packed)
  • ¼ cup white sugar
  • 60ml JUST egg
  • 1 tsp vanilla extract

TOPPINGS

  • White sanding sugar
  • Plant-based vanilla icing
  • White pearl candies

Directions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, Good Protein Gingerbread Cookie All-in-One Shake, baking powder, baking soda, salt, and spices.
  3. In a large bowl, whisk together the light brown sugar, white sugar, Earth’s Own Oat Nog, coconut oil, just egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean
  7. Allow cupcakes to cool completely before frosting.
  8. Once cooled, frost the cupcakes with a piping bag or spatula and sprinkle sanding sugar and white pearl candies.
