MATCHA MILK

1 tsp matcha
1/4 cup hot water
1 cup Earth’s Own Soy Barista

STRAWBERRY CREAM

1 cup strawberries
3/4 cup coconut milk

And if you’re looking to take this drink to the next level 😎

Edible rose petals
Fav liquid sweetener

Directions 👇

1. Start by making your strawberry cream. Add all the ingredients into a blender and combine until smooth.
2. Next up, whisk the hot water and matcha powder together until well combined. Pour in your Soy Barista and froth it up with the whisk.
3. Add ice cubes then pour over the strawberry cream.
4. Now pour the soy matcha over the strawberry cream.
5. Add sweetener to your liking and stir, sip n’ enjoy!

Oh hey! It’s National Pancake Day 🥞 And what better way to celebrate than with some Chocolate Berry Oat Pancakes?
 
Ingredients 👇
 
2 cups rolled oats 
2 bananas 
1 1/2 cups Earth’s Own Chocolate Oat M*lk
1 tbsp coconut sugar 
1 tsp baking powder 
Pinch of salt  
1/4 cup cocoa powder 
1/4 cup water 
Blueberries

CHOCOLATE COCONUT CREAM
 
1 can cold coconut milk (placed in fridge so cream rises) 
50g 70% plant-based chocolate 
1 tbsp maple syrup
 
Directions 👇
 
1. Place a frying pan on the stove and crank up to medium heat.
2. While the pan is heating, place all the pancake ingredients into a blender (minus the blueberries) and blend till smooth n’ creamy. 
3. Scoop some of the pancake mixture onto your pan and shake it out so that the batter widens. Now toss a couple of blueberries on top! 
4. Cook your pancake until you see small bubbles forming. Now it’s time to take a deep breath (you got this) and flip! Cook for another minute or two.
5. Once all your pancakes are cooked, place the cold coconut cream into a bowl and use an emersion blender to blend the cream. You can add a little coconut milk from the can to help smooth out if necessary. 
6. Melt your chocolate in a microwave safe bowl on small intervals until melted. Pour into your coconut cream along with 1 tbsp of maple syrup. 
7. Top your pancakes with the chocolate coconut cream, berries, maple syrup and enjoy those luxurious pancakes!

It’s the first day of fall and we’re adding some serious plant-based spice 🎃
 
Chai spice pumpkin loaf ✨
 
Ingredients 👇

1 1/2 cups pumpkin purée
1 tsp vanilla extract
1/2 cup Earth’s Own Butter (made with real butter beans 💚)
1 1/2 cups organic brown sugar
1 chia egg (1 tbsp chia and 2 1/2 tbsps water)
1 1/2 cups flour
1/2 tsp baking powder
1 tsp baking soda
2 tsp chai spice (*cinnamon, ginger, cloves, cardamom, nutmeg, fine back pepper)
Pinch of salt
1/3 cup crushed pecans or nut of choice
 
CHAI CREAM CHEESE FROSTING
 
1 container Earth’s Own Cream Cheese
2 tbsps condensed coconut milk
1/4 cup organic powdered sugar
1 tsp chai spice*
1/2 tsp vanilla extract
 
Directions 👇

1. Preheat your oven to 350°F
2. Mix all the chai spice ingredients together and set aside (or use a premade blend!)
3. Next up mix your dry ingredients: flour, baking powder, baking soda, chai spice and salt.
4. Mix together your chia egg so it has time to congeal.
5. In a separate bowl, combine your butter and brown sugar together thoroughly, then add your chia egg, vanilla, pumpkin and mix well.
6. Slowly add in your dry ingredients to your wet until fully combined.
7. Line a loaf pan with parchment paper. Pro tip 🙌: Crunch up your paper and run under water to soften it. Squeeze your paper out well and line your tin pan.
8. Pour the loaf mixture into your pan and then place in the oven for 50 mins (ovens vary so make sure you keep an eye on it!).
9. While the loaf is baking, it’s time to make your frosting! Add all of the icing ingredients together, mix well and place in the fridge.
10. Once your loaf has cooled down, generously smear the icing on top and sprinkle it with pecans or your fav nuts!
