Easy Vegan Curry with Oat Cooking Cream

    Ingredients
    • 2 TBSP Olive Oil
    • 1 Eggplant (cubed)
    • 1 red pepper (chopped)
    • 1 Zucchini (sliced)
    • 1 medium red onion (diced)
    • 3 cloves of garlic (crushed)
    • 1 TSP garam masala powder or curry powder
    • 1 TSP turmeric
    • 1 TSP ground coriander
    • 1 can of chopped tomatoes
    • 1 ½ cups Earth's Own Culinary Cream
    Directions
    1. Prepare your vegetables.
    2. In a large frying pan heat the olive oil and add the eggplant, zucchini, red pepper and diced onions. Cook for 3-4 minutes stirring well so it doesn’t burn.
    3. Bring down to a medium heat and cook for a further 5-6 minutes, until tender.
    4. Add the garlic, garam masala, turmeric and ground coriander. Cook for another 3-4 minutes, stirring well.
    5. Pour in the chopped tomatoes and Earth’s Own Culinary Cream and simmer for 15 minutes.

    Serve and enjoy!
