Lemon Glazed Banana Loaf

Wet ingredients:
  • 3 overripe bananas
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • ⅓ cup coconut oil
  • ¼ cup Earth’s Own Oat Culinary Cream
Dry ingredients:
  • 1 ¼ cup all purpose white flour
  • 1 cup brown sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
Lemon Glaze ingredients:
  • 2 tbsp butter
  • 2 ½ tbsp white sugar
  • 1/4 cup Earth’s Own Oat Culinary Cream
  • 1 tsp lemon zest
  • Preheat oven to 350F
  • Mash bananas in a bowl and mix in the remaining wet ingredients (do not over mix)
  • In a 2nd bowl mix all of the dry ingredients together
  • Fold in wet mix bowl batter into the dry mix bowl (mix just enough to incorporate everything together however do not over mix)
  • Transfer this mixture into a greased bread pan
  • Place in oven and allow to bake for 40 minutes or until toothpick test comes out dry

*Once loaf is out of the oven, begin to prep your glaze*

  • Lemon Glaze method:
  • Melt butter in a pot on low heat
  • Mix in sugar until it dissolves and bubbles begin to form
  • Mix in Earth’s Own Oat Cream,turn off your heat once bubbles begin to form
  • Mix in lemon zest and allow sauce to cool for 5 minutes
  • Pour sauce on top of your loaf and it is ready to serve
