  • 2 tbsp olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 cups baby potato, chopped
  • 1 red bell pepper, chopped
  • 5 ears of corn, kernels removed from cob
  • 2 cups Earth’s Own Unsweetened Almond M*lk
  • 2 cups of vegetable broth
  • 2 tbsp nutritional yeast
  • Salt & Pepper
  • Smoked paprika
  • Green onions

In a pot, start sautéing the onion with olive oil over medium-high heat. Add garlic. When the onion is translucent, add the potato and a splash of water. Cover and let it simmer until slightly tender.

Add red bell pepper, corn kernels, almond milk, vegetable broth, nutritional yeast, salt and pepper. Bring to a boil, reduce and cover with a lid. Let it simmer for approximately 20 minutes.

Taste and adjust seasoning.

Top with smoked paprika and green onions before serving (don’t omit!)
