If you’re looking for a spec-taco-ular and delish as-heck meal that is hundo-p bold on flavour and a total crowd pleaser, these black bean tacos with an oh so creamy avo mash and red pepper sour cream is for you!

Ingredients
Taco Base
- 1 can black beans
- 1 red pepper, diced
- 1 medium onion, diced
- 1 large tomato, diced
- 2 tbsp taco seasoning*
- 2 tbsps olive oil
Avo Mash
- 2 avocado, mashed
- 1-2 garlic cloves, finely diced
- 1/2 a lime, juiced
- Pinch of salt
Red Pepper Sour Cream
- 1 container Earth’s Own Sour Cream
- 2 tbsps plant-based mayo
- 1/4 cup roasted red pepper spread
Taco Seasoning
- 1/4 cup chili powder
- 2 tbsps ground cumin
- 1 Tbsp smoked paprika
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp pepper

Directions
- Place a frying pan on medium heat.
- While the pan is heating up, prep your red pepper, onion and tomato. Once the pan is hot, toss in 1 tbsp of olive oil, onions, and peppers. Cook for about 7 mins.
- While your veggies are sautéing, open up your can of black beans, rinse and drain.
- Once the onion and peppers are cooked, toss in the tomato and black beans.
- Now it’s time to make your taco seasoning. Mix all of the spices together in a jar and shake, shake, shake!
- Add in 2 tbsps of the taco seasoning and 1 tbsp of olive oil into the pan and cook until the tomatoes are slightly broken down.
- For the avo mash, add 2 avocados, garlic, lime juice and salt together into a bowl and smash together until smooth n’ creamy.
- Next up is the sauce. Add the Earth’s Own Sour Cream, red pepper spread, plant-based mayo together and mix until well combined.
- Now it’s the fun part, time to fix up your tacos! Warm your tortillas and add lettuce, black bean mixture, avo mash, red pepper sour cream and cilantro. Top with a squeeze of lime and enjoy!
