Creamy Veggie Orzo Salad

A plant-based twist on a comforting classic! We packed all of the flavour (did someone say herb sour cream dressing?) into this quick n’ easy creamy veggie orzo salad that is totally powered by plants and 100% irresistible.

Ingredients

  • 500g dried orzo
  • 4 green onions, chopped
  • 1 cup corn kernels
  • 20 sun-dried tomatoes, chopped
  • 1 cup chickpeas
  • 1 cup plant-based feta, crumbled
  • 2 cups raw broccoli, chopped
  • 1/2 cup red onion, diced

Herby Sour Cream Dressing

  • 1 container of Earth’s Own Sour Cream
  • 1/4 cup plant-based mayo
  • 2 garlic cloves
  • 1 cup fresh dill
  • 1 cup fresh cilantro
  • 1 tbsp lemon juice
  • Pinch of salt
  • Pinch of pepper

 

Directions

  1. Place a pot of water on the stove on high heat and bring to a boil. Once boiling, pour in the orzo and cook for 10 mins and strain.
  2. While your waiting for the orzo, prep all of your additional ingredients!
  3. For the herby sour cream sauce, place all of the prepped ingredients into a blender and blend until smooth n’ thick.
  4. Take a large bowl and mix the orzo, veggies and the herby sour cream dressing together until well combined and voila!
