Ingredients
- 1 cup pumpkin pie filling
Note: make sure you get pumpkin pie filling and not pumpkin puree
- 1 cup oat flour
- 1 cup oats
- 140g plant-based graham crackers
- 1/4 cup Earth’s Own Oat Zero Sugar Vanilla
- 1/2 cup plant-based white chocolate chips
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground cardamom
- 1/4 tsp allspice
Chocolate Coating
- 3/4 cup plant-based white chocolate
- 1 tbsp coconut oil
Directions
- Add the oat flour and graham crackers into a good processor and pulse until you have a fine crumb.
- Add the pumpkin pie filling, spices, and Earth’s Own Oat Zero Sugar Vanilla. Blend until fully combined.
- Add the oats and plant-based white chocolate chips. Blend until the dough starts to thicken.
- Lightly dampen your hands with water, take the dough and roll into approximately 15 bites.
- Place the bites in the freezer for 30 minutes to firm.
- After 30 minutes, add the plant-based white chocolate and coconut oil into a small bowl. Heat in the microwave in 30 second intervals until smooth n’ fully melted.
- Dip each bite into the chocolate coating and add some pizazz with your fav sprinkles. Set aside to cool and enjoy!
