Ingredients

  • 1 bag blue corn chips
  • 2 cups vegan tex mex cheese
  • 1/2 cup corn kernels
  • 1 jalapeño, sliced
  • 1 tomato, chopped
  • 2 green onions, chopped
  • 1/3 cup black olives, sliced
  • 1/4 cup cilantro, chopped

CHIPOTLE SAUCE

Directions

  1. Start by adding all your chipotle ingredients into a blender and blend until smooth.
  2. Place your tortillas on a baking sheet or on an oven-safe dish and add a layer of your vegan tex mex cheese.
  3. Now top the rest of the ingredients on the nachos, then finish with another top layer of cheese (you can never have too much cheese!)
  4. Place your oven on broil and then place your nachos in the oven. Keep an eye on them, as this will only take a couple of minutes to bake!
  5. Once your nachos are crispy to your liking, take them out of the oven, drizzle on your chipotle sauce and enjoy these plant-licious nachos!
