Smoky Corn Chowder

There’s cozy, and then there’s this smoky corn chowder kind of cozy. Rich, flavourful, with real-deal creaminess thanks to The Alt, our 1:1 dairy swap that brings the milky-licious taste you know and love. Grab your pot (and maybe a second spoon) things are about to get souper delish!

Ingredients

  • 2 cups Earth’s Own The Alt
  • 2 ½ cups vegetable broth
  • 1 ½ cups yellow onion, diced
  • 1 ½ cups celery, diced
  • 5 cups gold potatoes, diced
  • 3 ½ cups frozen or fresh corn
  • 3 cloves garlic, minced
  • 2 tbsps olive oil
  • 1 tsp paprika
  • ½ tsp fresh thyme
  • 1 tsp liquid smoke

GARNISH
Green onions or chives

Directions

  1. In a large pot, warm olive oil over medium heat. Add the onion and celery, and sauté until soft and fragrant, about 7 minutes.
  2. Stir in the garlic, smoked paprika, thyme, salt, and pepper, and cook for another minute until aromatic.
  3. Add the diced potatoes, corn, Earth’s Own The Alt, vegetable broth cubes, and water. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  4. Scoop out about 1/3 of the chowder and blend until roughly smooth, then return it to the pot. Stir in a touch of liquid smoke and a handful of chopped fresh parsley.
  5. Ladle into bowls and garnish with a sprinkle of green onion or chives.
