Strawberries n’ Cream Popsicles

Ingredients

  • 2 cups frozen strawberries, thawed
  • 4 tbsps plant-based condensed milk
  • ½ cup Earth’s Own The Alt
  • ¾ cup full-fat coconut cream
  • ½ tsp vanilla extract
  • ⅓ tsp guar gum
  • Pinch of salt

Other

  • 6 tbsps fresh strawberries, chopped

Directions

  • Place the frozen strawberries in a bowl and let them thaw completely at room temperature, or fast thaw them in the microwave in 1-minute intervals. Be careful to not overheat, just thawed.
  • Add all the remaining ingredients into a blender and blend until completely smooth and creamy.
  • Add a tablespoon of chopped strawberries to each mold then pour the mixture over top.
  • Pop them into the freezer for at least 6 hours or overnight, until fully set and ready to enjoy on a sunny day!
