No other breakfast stacks up quite like these chocolate berry oat pancakes that are the definition of decadence. Talk about a delish way to start the day!

Ingredients
- 2 cups rolled oats
- 2 bananas
- 1 1/2 cups Earth’s Own Oat Chocolate
- 1 tbsp coconut sugar
- 1 tsp baking powder
- Pinch of salt
- 1/4 cup cocoa powder
- 1/4 cup water
- Blueberries
Chocolate Coconut Cream
- 1 can cold coconut milk (placed in fridge so the cream rises)
- 50g 70% vegan chocolate
- 1 tbsp maple syrup
Directions
- Place a frying pan on the stove and crank up to medium heat.
- While the pan is heating, place all the pancake ingredients into a blender (minus the blueberries) and blend till smooth n’ creamy.
- Scoop some of the pancake mixture onto your pan and shake it out so that the batter widens. Now toss a couple of blueberries on top!
- Cook your pancake until you see small bubbles forming. Now it’s time to take a deep breath (you got this) and flip! Cook for another minute or two.
- Once all your pancakes are cooked, place the cold coconut cream into a bowl and use an emersion blender to blend the cream. You can add a little coconut milk from the can to help smooth out if necessary.
- Melt your chocolate in a microwave safe bowl on small intervals until melted. Pour into your coconut cream along with 1 tbsp of maple syrup.
- Top your pancakes with the chocolate coconut cream, berries, maple syrup and enjoy those luxurious pancakes!
