Creamy Vodka Penne

You’re pasta-bly going to need seconds (or thirds) of this creamy vodka penne! The sauce is so rich n’ creamy, you’d never guess it’s dairy-free. It’s all thanks to The Alt our 1:1 dairy swap, which delivers a milk-like taste and acts just like the real deal in cooking!

Ingredients

  • 350g dry penne pasta
  • 1 tablespoon olive oil
  • 1 large shallot, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup vodka
  • 1/2 cup tomato paste
  • 1/4 tsp chili flakes
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups Earth’s Own The Alt
  • 1/3 cup parmesan
Garnish
  • Fresh basil, chopped

Directions

  1. Cook the penne pasta according to the package instructions until al dente. Drain the pasta and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the shallots and sauté until soft, about 5 minutes.
  3. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Carefully add the vodka to the pan, letting it cook for 2-3 minutes.
  5. Stir in the tomato paste, oregano, chili flakes, salt and pepper. Cook for another 3 minutes, until fragrant.
  6. Reduce the heat medium-low and add Earth’s Own The Alt and parmesan. Simmer for 5-7 minutes until the heat through.
  7. Toss the cooked penne pasta in the sauce until well-coated. Add extra salt or pepper as desired.
  8. Serve with fresh basil on top if desired and enjoy!
