Blueberry Iced Latte

When blueberry sweetness meets smooth espresso and dreamy microfoam, you get a latte that’s dangerously good. All thanks to Oat Barista Light, the coffee companion that keeps it light on oat, big on unlimited lattes, and brings all the café vibes home!

Ingredients

  • 250ml Earth’s Own Oat Barista Light
  • 1 tbsps espresso powder (or 2 shots espresso) 
  • 1 tbsp hot water  (skip this part if using real espresso) 
  • 1/2 of the blueberry syrup 

Cold Foam

Blueberry syrup

  • 170g (6oz) Fresh blueberries
  • 1/4 cup sugar 
  • 1 tsp vanilla extract

Directions

  1. In a small pot set over medium heat, combine fresh blueberries, sugar, and a splash of vanilla extract. Stir frequently as the mixture heats, allowing the fruit to break down and release its juices (about 12 minutes).
  2. Once the mixture has thickened and the berries have softened completely, pour it through a fine-mesh strainer set over a bowl to extract the syrup. Use the back of a spoon to gently press and mash the berries in the strainer, helping release as much juice as possible.
  3. For a bonus, save the leftover blueberry solids! They make a perfect pancake topping or can be blended into a smoothie for a no-waste treat.
  4. To make the blueberry iced latte, start by adding ice to your glass. Pour in ¼ to ½ of the prepared blueberry syrup, depending on how sweet you like your drink.
  5. Next, add Earth’s Own Oat Barista Light, followed by either 1 tablespoon of espresso powder dissolved in 1 tablespoon of hot water, or 2 shots of freshly brewed espresso.
  6. To finish, foam some extra Earth’s Own Oat Barista Light using your preferred method, then gently spoon the foam on top of your latte. Give it a stir and enjoy!
