We’re back, putting The Alt to the ALT-imate test! This time, we’re swapping out a classic dairy custard for The Alt, our 1:1 dairy swap that simmers and sets just like the real deal!

The Alt is 100% plant-based, but made for everyone. And this custard? Proof that adding more plants to your day can be simple and seriously delish.

Ingredients

  • 4 large egg yolks (plant-based option: 1/3 cup Just Egg)
  • 1/2 cup sugar
  • 4 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Directions

  1. In a medium bowl, whisk together the egg yolks, sugar, cornstarch, and salt until the mixture is smooth.
  2. In a saucepan, heat the Earth’s Own The Alt over medium heat until it’s hot and steaming, but not boiling.
  3. While whisking the egg mixture constantly, slowly pour in a small amount of the hot milk. This helps gradually warm the eggs so they don’t scramble.
  4. Once the egg mixture is warmed, slowly pour in the remaining Earth’s Own The Alt while whisking continuously.
  5. Pour the mixture back into the pot and return it to the stove over medium heat. Whisk constantly until it starts to thicken, then immediately take it off the heat and keep whisking.
  6. Lastly, stir in the vanilla extract until smooth.
  7. Let the custard cool slightly, then cover the bowl and refrigerate until fully chilled and set.
