Mocha Coffee Crunch Popsicles

Ingredients

  • 1 can full fat coconut milk
  • 1 1/2 cups Earth’s Own Chocolate Oat M*lk
  • 1 cup peanut butter or nut butter of choice
  • 1/3 cup espresso powder
  • 1 cup date sugar
  • 1 tsp coconut oil

     Topping

  • 1/2 cup coffee beans
  • 1 cup plant-based chocolate

 

Directions

  1. Blend all ingredients in blender until smooth
  2. Depending on popsicle containers, place popsicle sticks into molds and set in place. Now pour mixture into the slots
  3. Freeze for at least 6hrs or overnight
  4. Once frozen, crush up your bean in a mortar or pestle or food processor until you get broken up chunks
  5. Next up, melt chocolate in the microwave on 30 second intervals and stir in between. Do this until fully melted and then stir in your coconut oil
  6. Dip your popsicle into the chocolate and let the excess chocolate drip off. Quickly add your crunchy coffee beans on top and let set in freezer or enjoy right away. Store left overs in air tight container.
