Chocolate Pudding

Made with our Oat Chocolate, this decadent pudding is full of chocolate-y, dairy-free bliss!

Ingredients

  • 2 cups Earth’s Own Oat Chocolate
  • 1/2 cup Plant-based dark chocolate chips, melted
  • 1/4 cup cornstarch, sifted
  • 1/4 cup cocoa powder, sifted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Directions

  1. In a small bowl, whisk together cornstarch, cocoa powder, and a pinch of salt until well combined.
  2. Grab a medium saucepan and heat Earth’s Own Oat Chocolate over medium heat until it starts to simmer.
  3. Remove simmering Oat Chocolate from stove and gradually whisk the dry ingredients in until smooth and thickened.
  4. Next stir in the maple syrup and vanilla extract.
  5. Once all mixed, in a separate microwave safe bowl, melt the dark chocolate chips on intervals of 20 seconds until fully melted, then stir it into the pudding mixture. (Note if you want an even silkier pudding, blend mixture in a blender or with an immersion blender).
  6. Finally, divide the pudding into individual serving bowls and cover with plastic wrap. Refrigerate for at least 2 hours, or until chilled.
  7. To add even more deliciousness (t-oat-lly optional), top with coconut cream and chocolate shavings!
