Mocha Peppermint Cookies

 

What happens when you combine rich n’ decadent chocolate with a sprinkle of holiday cheer?

You get a flavour combo that’s full on festive and totally mint to be!

 

Serves: 10 (1 cookie each)

Ingredients

Mocha Peppermint Cookies

  • 1 1/4 cup flour (lightly spooned into measuring cups)
  • 1/2 cup Earth’s Own Butter, melted
  • 1/2 cup Earth’s Own Oat Chocolate M*lk
  • 1/2 cup unsweetened cocoa powder
  • 1 cup light plant-based brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 2 tbsp instant coffee
  • Pinch of salt

 

Toppings

  • 1/4 cup peppermint candy, roughly crushed
  • 1/2 cup vegan chocolate wafers, roughly crushed
  • 1/4 cup vegan dark chocolate,  melted

 

Directions

  1. Start by preheating your oven to 350°F
  2. Place your browned and melted Earth’s Own Butter and brown sugar into a bowl, whisk until smooth n’ creamy. 
  3. Next up mix in the cornstarch, baking powder, baking soda, salt and instant coffee.
  4. Now it’s time to add the Earth’s Own Oat Chocolate M*lk and the unsweetened cocoa powder. Mix together until fully combined and add the flour a little bit at a time.
  5. Scoop your cookies on a sheet of parchment paper and place in the oven for 10 mins.
  6. While the cookies are baking, melt 1/4 cup vegan dark chocolate chips in a microwave safe bowl on intervals of 15 seconds. Stir in between intervals until super smooth. Add the chocolate into a piping bag.
  7. Crush your peppermint candies and vegan chocolate wafers, set aside.
  8. Once the timer is up, take the cookies out and place them onto a cooling rack. They will seem puffy and undercooked, this is what we want! Cool them for about 20 mins. 
  9. Once cooled, pipe with chocolate and sprinkle on your crushed peppermint candy and enjoy!
