Vegan Cheese Curds

Directions

1. Preheat a pot on medium heat (this will be used for the vegan cheese curds)
2. Add all of the cheese curd ingredients into a blender and blend until smooth
*If you don’t have a high power blender, boil your cashews in a pot of water for 10 mins before blending!
3. Place the vegan cheese curd mixture into your preheated pot and stir continuously, it will thicken within a few minutes
4. Once thick, remove and place on a piece of parchment paper to cool. The cheese will thicken and become more mozzarella-like as it continues to cool down
5. Once cooled, pull apart into curd size pieces and set aside.
6. Next, cook the fries and vegan gravy according to their packages.
7. Once ready, top the crispy fries with cheese curds, gravy, green onions and enjoy!
