Banana Blueberry Crumble Muffins

These Banana Blueberry Crumble Muffins are berry a-peeling (and totally plant-based) – talk about delish!

Ingredients

Banana Blueberry Muffins

  • 4 ripe bananas, mashed’
  • 1 1/4 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/4 cup Earth’s Own Naked Oat
  • 1/3 cup Earth’s Own Butter, melted
  • 1/2 cup plant-based brown sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • Pinch of salt

Chia Egg

  • 1 tbsp chia seeds
  • 2 1/2 tbsps water

Granola Sugar Crumble

  • 1 tbsp coconut oil
  • 1/4 cup plain granola
  • 1/4 cup coconut sugar

Directions

  1. Get your oven nice and toasty by preheating to 350°F.
  2. In a large mixing bowl, mix your flour, baking powder, baking soda and salt – set aside.
  3. In a separate large mixing bowl, mix your melted Earth’s Own Butter and sugar together until well combined. 
  4. Mix in your Earth’s Own Naked Oat, vanilla extract and chia egg. Once combined, add in your mashed banana.
  5. Slowly fold the flour mixture into the wet batter, a little at a time.
  6. Now it’s time for the granola crumble! Mix your coconut oil, granola and coconut sugar together – set aside.
  7. Coat your muffin tin with oil or Butter and scoop in your banana blueberry muffin batter. Sprinkle the tops with your delish crumble.
  8. Bake in the oven for 25-30 mins and go bananas for National Banana Bread Day!
