These Banana Blueberry Crumble Muffins are berry a-peeling (and totally plant-based) – talk about delish!

Ingredients
Banana Blueberry Muffins
- 4 ripe bananas, mashed’
- 1 1/4 cup fresh blueberries
- 1 1/2 cups all-purpose flour
- 1/4 cup Earth’s Own Naked Oat
- 1/3 cup Earth’s Own Butter, melted
- 1/2 cup plant-based brown sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- Pinch of salt
Chia Egg
- 1 tbsp chia seeds
- 2 1/2 tbsps water
Granola Sugar Crumble
- 1 tbsp coconut oil
- 1/4 cup plain granola
- 1/4 cup coconut sugar
Directions
- Get your oven nice and toasty by preheating to 350°F.
- In a large mixing bowl, mix your flour, baking powder, baking soda and salt – set aside.
- In a separate large mixing bowl, mix your melted Earth’s Own Butter and sugar together until well combined.
- Mix in your Earth’s Own Naked Oat, vanilla extract and chia egg. Once combined, add in your mashed banana.
- Slowly fold the flour mixture into the wet batter, a little at a time.
- Now it’s time for the granola crumble! Mix your coconut oil, granola and coconut sugar together – set aside.
- Coat your muffin tin with oil or Butter and scoop in your banana blueberry muffin batter. Sprinkle the tops with your delish crumble.
- Bake in the oven for 25-30 mins and go bananas for National Banana Bread Day!
